Baked Salmon With Ginger Miso Glaze

Ingredients
  • 1 TBSP olive oil
  • 1 lb. salmon, cut into 4 equal portions (or you can use pre-cut portions from the grocery store)
  • 1 TBSP red miso paste
  • 1 TBSP honey
  • 1½ tsp. freshly grated ginger
  • 1 tsp. soy sauce (or gluten-free tamari)
  • 2 TBSP hot water
  • Sliced green onions and sesame seeds, for garnish
Instructions
  1. Line a rimmed baking sheet with parchment, and brush lightly with the olive oil. Preheat oven to 375 degrees F.
  2. In a bowl, stir together the miso paste, honey, ginger, soy sauce, and hot water.
  3. Lay the salmon on the prepared baking sheet, and spoon about 1 TBSP of glaze over the top of each fillet. Sprinkle with a pinch of sesame seeds, and place on the center rack of the preheated oven.
  4. Bake for about 10-15 minutes (depending on how thick the fish is, and how well done you like it. Keep a close eye.) To test doneness, gently prod a fillet with the tines of a fork. If it begins to flake easily, and is opaque all the way through, it's done.
  5. Remove from the oven and garnish with chopped green onions. Serve immediately.

If you have celiac's disease or an allergy to gluten, be sure to use gluten-free tamari in place of the soy sauce, and check the label on your miso paste to be sure it doesn't contain trace amounts of wheat.
