Apple Wedges with Brie, Honey, and Pistachios

Five rules to leading a happy life:

1. Get lots of sleep
2. Drink plenty of water
3. Love freely
4. Be sincere
5. Eat cheese

Okay, so eating cheese isn’t a necessary component to being happy, but it definitely helps. If you’re vegan, or lactose intolerant, cheese might not be the answer for you. Recently for me, however, cheese has been a huge factor in my happiness. I’m pretty sure there’s a direct correlation between them. The more cheese, the happier I am. Seems legit, right?

It all started a few weeks ago, when I struck up an innocent conversation with the guy behind the cheese counter at my local grocery store. We chatted about this and that, one thing led to another, and, well… I ended up coming home with a basket full of cheese.

Of those cheeses, the one that put me under its spell was a soft, unassuming wedge of brie. Now, I love me a good brie (you may remember the baked brie with candied walnuts I made for the New Year), but there was something special about this one. One plate of crackers later, and poof, it had vanished.

Ever since the mysterious brie disappearance of early last week, I’ve been hooked. This little number has been one of my favorite snacks for a few days running. It’s exceedingly simple — wedge of apple, shmear of brie, sprinkle of chopped pistachios, and a drizzle of honey. The honey is optional, depending on how sweet the apple is, and what mood I’m in.

Really, that’s it. There is no recipe, just your favorite eating apple, and a good wedge of triple creme brie (rule of thumb: the more “creme’s” it has in its name, the creamier and more luxurious it is). So good, I had to share it with you.

    This snack is LEGIT. So are those five rules.

    There are a couple great sources for cheese here in Halifax. I like to pick up a few (hundred), put on my pyjamas, and then EAT IT. Lots of it. I love cheese.

      Yes, I forgot to mention the pajamas — those are on the list of rules to being happy. Confession, I once purchased a pair of pregnancy pants, thinking they were just really awesome pajamas. I dubbed them my ice cream pants. You can imagine why.

      Heheh, I’d be glad for you to take them off my hands, if only to keep me from eating them all first! It’s a force of will for me to steer clear of the cheese counter. If I go anywhere near it, it’s like wedges of brie just jump into my cart and wind up coming home with me. I don’t know how it happens!

    i am FASCINATED by cheeses. i’m dangerous in any sort of cheese shop because all i want to do is taste all the things, and experiment with them. and i’ve come to find that there are limitless types of cheese out there to explore; a happy problem, i suppose. my mind races every time i try a new one thinking of what else it would pair with, how it can be used, etc. i know people do that all the time with wine, but that has never seemed like fun to me. cheese? THAT sounds like fun. Viva. la. Fromage.

      They do, don’t they? I can actually remember really clearly the first time I ate cheese and apples together, and I’ve been hooked ever since!

    Thanks for sharing, I absolutely agree that cheese has to be on the list for the pursuit of happiness. ;) I also love brie, but another winner is drunken goat cheese (red wine soaked) or manchego!

      Ooh, I agree. I had a sample of drunken goat cheese a while back which I completely forgot about until now, but it was amazing. And Manchego is fantastic!
